3 Egg Yolks
- 1 1/2 cups Granulated Sugar
- 3 Tablespoons Cornstarch
- 1/2 cup Cocoa Powder
- 3 cups Whole Milk
- 2 teaspoons Vanilla Extract
Instructions
- In a medium saucepan, whisk together the granulated sugar, cornstarch, and cocoa power until well combined.
- Gradually add the egg yolks and milk, stirring constantly, until the mixture is smooth.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture comes to a boil and thickens to your desired consistency.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Allow pudding to cool slightly before transferring into serving dishes. Refrigerate until fully chilled before serving.
FREEZE-DRYING INSTRUCTIONS
- Allow pudding to completely cool before freeze drying.
- Pudding may be dropped by spoonful's onto freeze drying trays lined with silicone mats to make cookie type shapes. Or poured into molds and pre-frozen before freeze drying for fun, poppable bites. You can also spread thinly onto trays to freeze dry into a powder form.
- Be sure to make note of the weight of the trays with food before freeze drying. .
- Process according to freeze-dryer instructions.
- When finished freeze-drying, note the weight of the trays. The difference in weight of the trays before and after freeze-drying is the recommended amount of water needed to reconstitute.
TO RECONSTITUTE
Add recommended amount of water to powder. Stir and let sit a few minutes until fully reconstituted. Chill in refrigerator before serving, if desired.
