Ingredients
- ½ Cup unsalted butter, room temperature
- ½ Cup Vegetable shortening
- ¾ Cup freeze-dried raspberries
- 1 tsp pure vanilla extract
- 3 ½ cups sifted powdered sugar
- Pinch of salt
Directions
Crush ¾ cup freeze-dried raspberries into a fine powder. (You may use a food processor if preferred.)
Whip butter and vegetable shortening with mixer on medium-high speed until it’s creamy. (About 5 minutes) Add vanilla and crushed freeze-dried raspberries. Mix on medium until fully combined.
Add the powdered sugar one cup at a time and mix on low speed. Add pinch of salt and mix on low speed until fully combined and smooth. (About 1-2 minutes.)
Spread onto a 9x13” cake or 12 large cupcakes. Garnish with fresh or freeze-dried raspberries and mint.
